誰說高山茶一定比較營養?

由於高山茶生長在整年冷涼的高山,雲霧環繞,平均日照時間短,茶樹生長較慢,地表土壤有機質含量豐富,提供茶樹足夠的營養,因此高山茶茶葉較厚且膠質多。根據研究顯示,茶多酚兒茶素會隨海拔高度增加與氣溫降低而減少,胺基酸可溶氮則隨海拔增加與氣溫降低而增加,而茶多酚兒茶素是造成茶湯苦澀的來源,胺基酸可溶氮則會使得茶湯較為甘醇滑潤,因此高山茶生長在氣溫相對較低的高山,使得茶中的胺基酸與有機酸含量相較中低海拔的茶來的多,香氣佳,口感較為回甘、鮮爽柔潤[1-3]。

中低海拔因為環境較高溫,使得茶葉的兒茶素與含量較高,也因為要對抗病蟲害,所以可能分泌較多的咖啡因,造成口感可能較為苦澀些[1-3],不過雖然高山茶胺基酸平地茶來的多,較為甘甜,但中低海拔的茶葉含有較多兒茶素,而兒茶素具有很強的抗氧化能力,能夠幫助預防多種疾病,因此兩者特色不同,沒有誰比誰好,只是取決於喝茶時想要的茶湯口感與滋味,可以有不一樣的選擇。只要是天然的茶葉,都含有茶多酚維生素胺基酸等有益物質,普遍對於人體的健康是有很大的好處的!

The difference of the nutrition between alpine tea and lowland tea

Alpine tea is planted and grows slow in the high mountain where the temperature is lower, clouds and fogs are surrounded and the time of sunshine is shorter. The soil containing organic materials provides tea trees rich nutrition so that the leaves are usually thicker and have more colloids. Research shows that polyphenols and catechin would decrease with the altitude increasing or the temperature decreasing. Amino acids and soluble nitrogen would increase with the altitude increasing or the temperature decreasing. Furthermore, polyphenols and catechin make tea bitter, meanwhile, amino acids and soluble nitrogen make tea sweeter. Therefore, amino acids and soluble nitrogen in alpine tea which grows in the high mountain is more compared to lowland tea, which make alpine tea taste sweeter and softer[1-3].

Lowland tea grows in the environment where the temperature is higher, which make catechin more. Meanwhile. it would secret more caffeine to fight for pests. Therefore, lowland tea tastes quite bitter[1-3]. However, although alpine tea contains more amino acids and is also sweeter than lowland tea, lowland tea contains more catechin. Catechin has strong antioxidant capacity, which can help prevent a lot of diseases. Therefore, lowland tea can be as good as alpine tea with the different characteristics. You can have the different choice depends on your favorite flavor or your mood. Generally, all natural tea has polyphenols, vitamin, amino acids, and so on, which is really beneficial to our health.
