泡茶溫度與時間的重要性

在溫度方面,基本上茶葉中的茶多酚咖啡因的含量會因為沖泡的水溫不同而有差異,水溫越高,茶多酚咖啡因也越多,但並不意味著越滾燙的水越好。根據研究發現,若以冷水來泡茶,低溫可以保有兒茶素,並使得茶中的單寧酸咖啡因茶鹼釋放較少,減少對腸胃的刺激,喝起來較清爽甘甜,而且冷水也較不容易破壞茶中的維生素礦物質;反之,若以熱水來泡茶,高溫較會釋放較多的單寧酸咖啡因,口感喝起來較為苦澀濃郁,同時大量的單寧酸也可能造成便秘,而且高溫容易破壞茶多酚,尤其是兒茶素,因此最好不要使用太燙的熱水,才有利於兒茶素的釋放,達到健康保健的效果。對於已經沖泡好的茶水,也不要間隔太久才飲用,因為茶中的兒茶素也會受到環境的溫度等因素所影響,造成兒茶素的減少[1-3]。

不同茶葉種類,對沖泡水溫的標準也不同,以綠茶而言,使用80度至90度的水較為適當,因為綠茶具有豐富的單寧酸,若以高溫沖泡,則較為苦澀且兒茶素維生素也易被破壞。不同於綠茶紅茶則需要高溫沖泡,才能讓紅茶內有益的類黃酮物質釋放,不只散出濃厚的香氣,還具有保健功能,因此使用約90度的水沖泡較為適當,而烏龍茶及包種茶的沖泡溫度也與此類似[4]。

在時間方面,一杯茶以熱水沖泡大約2至5分鐘即屬於太久,如果茶葉沖泡時間過久,形同濃縮茶中的單寧酸兒茶素咖啡因茶鹼等物質好幾倍,茶色較深,茶水濃度也較高,而此時如果飲用含有大量單寧酸的茶水,可能會加重便秘或造成心悸的情況,也因為沖泡太久的茶含有大量鉀離子,因此對於糖尿病或高血壓的人,容易產生腎衰竭的風險,因此沖泡時間不宜太長,以1分鐘上下最為適當。另外,針對許多人泡茶會透過第一泡沖掉農藥的迷思,專家也指出前三泡的茶營養價值最高,若真的有農藥殘存,也無法如此輕易沖掉[5-6]。

沖泡茶葉的溫度與時間對於喝茶品質與身體健康相當重要,而當我們去現在滿街到處可見的手搖飲料店購買茶飲時,無從得知店家選用茶葉的品質,也難以觀察到他們熬煮茶葉的環境品質控制,最重要的是我們並不知道我們所喝下的這一杯茶已經泡了多久以及茶中對人體健康有害的物質已經產生了多少,因此最保險的方法還是由我們親自泡茶,除了享受泡茶自製的樂趣,還能為自己的健康把關。

The importance of the brewing time and the temperature

The temperature and time of brewing are both important for tea taste and our health. In the aspect of temperature, polyphenols and caffeine in tea increase with the temperature rising. However, it doesn’t mean that hotter water is always suitable for tea steep. According to research, cold water preserves more catechin, and tannic acid, caffeine and theophylline are produced less to reduce the risk of stomachache. Cold water keep vitamins and minerals in tea as well. Tea steeped in lower temperature tastes soft and fresh. On the other hand, hot water accelerates to produce tannic acid and caffeine. A great amount of tannic acid could lead to constipation. Furthermore, high temperature damages polyphenols, especially catechin. Leaving tea aside too long also decreases catechin in tea. Tea brewed in high temperature tastes bitter and strong. It is recommend to brew green tea between 80-90 degrees Celsius and brew black tea at around 90 degrees Celsius[1-4].

In the aspect of brewing time, it is harmful to brew a cup of tea over 2 minutes. Tannic acid, caffeine and theophylline in tea would increase significantly if tea is steeped for too long. Drinking tea containing a great amount of tannic acid also leads to constipation or palpitations. Meanwhile, tea brewed for too long contains much potassium, which may result in renal failure for those who suffer from diabetes or hypertension. Therefore, it is suggested to brew tea in a minute. Furthermore, experts in nutrition indicate that the nutrition of tea ranks the highest in the first three brewing[5-6].

The temperature and time of brewing influence both tea taste and our health. When we go to beverage stores for a drink, we don’t know about where tea comes from and what quality they use. Additionally, the most important problem is that we are not sure how long tea they sell has been steeped and how many harmful substances it has. Therefore, it is better to brew tea by ourselves for both enjoyment and health care.
