茶湯表面泡泡是不是有問題?

為什麼茶湯表面有泡沫? 是農藥? 還是買到不好的茶葉?

泡茶時,茶湯表面會產生泡沫的原因是因為茶皂素茶皂素是一種糖苷類化合物,屬於天然的界面活性劑,微酸性,滋味微苦,有很強的起泡力且不受水質硬度的影響,隨著茶葉的生長而增加,但茶皂素在茶葉中的含量很低,對茶葉的品質好壞沒有影響,因此由茶皂素引起的泡沫對人體健康無害[1-4]。

茶皂素可以調節血糖,降低膽固醇,幫助減肥,預防心血管疾病,有多種消炎與抗病作用,還具有抑制酒精吸收的特性,促進體內酒精代謝,保護肝臟。同時茶皂素的應用層面與產業也相當地廣泛,常常用來製造各種類型的洗滌劑或泡沫劑等其他藥劑[1-4]。

泡茶將水倒進杯子時,水的流動刺激了茶皂素的活性,進而產生許多泡沫。產生泡沫不是因為農藥,也不是因為茶葉不乾淨,如果就這樣將茶湯全部倒掉的話是非常可惜的。茶皂素是茶葉的原有成分,因此泡茶時會產生泡泡也是很正常的現象哦!

The reason why foam appears when brewing tea is because of tea saponin. Tea saponin which is slightly acidic and tastes bitter a bit is a kind of glycosides. Tea saponin, also a natural surfactant, has a strong foaming power which isn’t affected by the hardiness of water. Tea saponin increases with tea trees growing. However, it accounts little in tea, and has no influence on the quality of tea. Therefore, foam which arise from tea saponin wouldn’t harm our health[1-4].

Tea saponin helps regulate blood sugar, reduce cholesterol, benefits weight loss, prevent from cardiovascular diseases, resist inflammation, and suppress the absorption of alcohol to protect liver. Tea saponin can also be adopted to many products and industries, such as detergents and foams[1-4].

The flow of water activates the characteristic of tea saponin to foam when brewing tea. Therefore, foam result from neither pesticides nor unclear tea. Tea saponin is a natural ingredient in tea. It’s common to foam when brewing tea, so don’t be afraid if you see foam on the surface of tea!
