你還在用熱水沖泡茶葉嗎?其實冷泡茶的營養是相當豐富的.

冷泡茶是指透過常溫的水或冷水所沖泡出來的茶湯,並不是用熱水沖泡冷卻後所形成的。熱水沖泡的茶湯,因為高溫會促進較多的單寧酸咖啡因釋放出來,口感較刺激且濃郁強烈,即使冷卻後,咖啡因也不會流失,但是用冷水沖泡的冷泡茶,由於溫度低,產生茶葉甜味的來源—胺基酸,相對容易釋放,而造成苦澀來源的單寧酸咖啡因則不容易釋出,以咖啡因含量來說,冷泡4小時大約只有用熱水沖泡5分鐘的一半,冷泡8小時也大約只有熱水沖泡的70%,因此冷泡茶口感較清爽甘甜,對腸胃的刺激較小,也不容易影響睡眠品質,適合腸胃功能較弱或是對咖啡因較敏感的人飲用[1-4]。

營養方面,喝冷泡茶一樣也能得到豐富的營養,因為冷水較不容易破壞茶多酚蛋白質維生素等物質,因此保留了許多的營養成分,根據實驗顯示,抗氧化能力強的游離型酯化型兒茶素,一樣可以在冷水中釋放,與市面上罐裝茶飲料相比,冷泡茶的好處更為顯著[1-4]。

冷泡茶製作簡單又方便,只要將茶葉放入常溫的水或冷水中,在浸泡過程中盡量放置在冰箱保存,避免細菌滋生,根據研究指出以浸泡4到8小時效果較佳,茶與水的比例大約1:50,即一個茶包、2到3克或8到10克茶葉搭配600c.c的水,可以依照個人口味做調整,而冷泡茶沖泡的茶葉只能沖泡一次。通常冷藏的冷泡茶大約可以保存兩三天,不過為了確保最佳品質及健康的考量,盡量不要飲用浸泡超過一天的冷泡茶,避免茶湯變質而影響健康[3-4]。

不過如果你認為任何茶葉都適合拿來當作冷泡茶,可能就大錯特錯囉!一般而言,條狀的茶葉比較適合製作成冷泡茶,例如綠茶包種茶,因為茶葉容易伸展且速度快,製作時間短,比較不用擔心茶湯變質的問題。烏龍茶鐵觀音茶,因為茶葉較大且呈球狀,需要有足夠的時間伸展,因此浸泡時間相對長。另外,根據研究指出由於普洱茶的生菌與黴菌數含量較高,因此也只建議用熱水沖泡,較不適合製作成冷泡茶[3-4]。

Introduction to cold brewing tea

Cold brewing tea is brewed at lower temperature instead of cooling down after hot steeping. Tea brewed at high temperature releases more tannic acid and caffeine, and tastes stronger. Caffeine remains even after cooling. However, tea brewed by lower temperature water releases more amino acids (source of sweetness), and less tannic acid and caffeine (source of bitterness). That explains the cold brewed tea tastes sweeter than the hot brewed tea. Brewing tea for 4 hours at room temperature only releases 50% caffeine of hot brewing tea for 5 minutes. After 8 hours brewing in cold water,  caffeine is only 70% comparing to 5 minutes hot steeping tea. Cold brewing tea tastes fresh and sweet. It neither hurts stomach nor causes insomnia. It is suitable for people sensitive to caffeine [1-4].

From health perspective, cold brewing tea is rich of nutritions, even more than hot brewed tea. Polyphenolsprotein and vitamins aren’t damaged easily in cold water. Research shows that epicatechin and epicatechin-3-gallate with strong antioxidant capability still can be released in cold water. Comparing to tea beverage in a bottle, fresh cold brewing tea benefits health a lot [1-4].

Making cold brewing tea is easy and convenient. First, put tea in cold water, then keep it in the refrigerator as possible to avoid bacteria growing. According to research, it is preferred to brew between 4 and 8 hours. The ratio of tea and water is 1:100. One tea bag (2-3 g) in 300-400c.c water is a good start. The recipe can be changed according to your preference. Tea for cold brewing tea is brewed only once. Usually cold brewing tea in the refrigerator could be kept for 2-3 days. However, for the best quality and health, it is advisable not to drink cold brewing tea overnight [3-4].

Shape of the tea may affect the efficiency of cold brewing process. Generally, twist shape tea, such as green tea and pouchong tea, is more preferable. It stretches easily and fast, more efficient to make cold brewing tea. For oolong tea and tieguanyin tea in ball shape, it consumes more time to stretch and release the flavour.

Due to the condition of post fermentation process, research shows that puer tea contains more mildew. Brewing temperature should be high to eliminate the gem and mildew [3-4].

Try to make a bottle of cold brewing tea. No special skill is required. Just simply put a tea bag in water and dwell 1 hr at room temperature or 6-8hrs in a refrigerator. The natural and sweet tea drink is ready to serve.
