茶葉的保存方法

你還在用橡皮筋或夾子封住茶葉袋的開口嗎?

我們平常喝完茶隨手用橡皮筋綁起來或用夾子夾好,都容易使茶葉受潮,使茶葉品質受到影響。由於茶葉很容易吸收雜味與水分,為了維持茶葉的品質,應該要保持乾燥的環境,減少細菌滋生,以利保存,而一般茶葉含水量要在5%以下,如果重捏茶葉而捏不碎,表示茶葉可能已經受潮,茶葉的香味也會因為外在環境而揮發或變質。除了濕度之外,溫度氧氣時間日照也是影響茶葉保存的重要因素,應該要盡量避免陽光直接照射,妥善利用低溫貯藏,隔絕氧氣防止氧化作用等,避免茶葉品質受到影響[1-2]。

茶葉保存方式大略可以分為常溫低溫

一、常溫

  1. 可以先將茶葉放入保鮮袋中,盡量將空氣擠出,若能以反方向套上第二層隔絕更好。選擇密封性佳、不透氣也不透光的容器或是真空容器,若能在保存容器內放入乾燥劑,並定時更換,效果會更好。
  2. 若選用金屬罐保存,可以先將少許茶末放入罐內搖晃數下,去除雜味,最後用保鮮袋密封再放入罐內,遠離陽光照射、火源或潮濕的地方。
  3. 若是一次購買大量的茶葉,則要分袋保存,減少其他還未使用的茶葉接觸到氧氣的機會,並放置到陰涼乾燥的地方[1-3]。

二、低溫

  1. 放入冰箱低溫保存之前,可以先妥善用保鮮袋將茶葉包裝密封,避免吸收到異味,再放進冰箱貯藏。
  2. 選擇低溫貯藏,應該保持在5℃上下,不過保存六個月以內,以0-5℃冷藏最有效,而保存超過半年以上,則以冷凍方式較佳。
  3. 若一次冷藏大量的茶葉,則應該予以分裝成數個小袋,以免同一包茶葉反覆冷藏。
  4. 從冰箱拿出來之後,應該等到金屬罐溫度與室溫接近再取出茶葉,避免茶葉容易因為凝結水氣而增加含水量,增加變質的風險[1-3]。

不論選擇常溫低溫的保存方式,不同的茶葉都要盡量分開保存,避免互相影響。不過即使處於保存良好的狀態,茶葉的香氣與品質可能還是會稍微下降,主要是因為茶葉成分還是會緩慢地進行氧化作用,胺基酸與香氣等也會揮發而減少,其中茶多酚氧化的物質容易與胺基酸結合成暗色的聚合物,使茶湯顏色加深,同時茶湯的新鮮度也會下降[4]。

有良好的保存方式,泡茶時才能夠享受一番美好的滋味,不過澄翠茶藝建議茶葉開封後還是盡快喝完,不只能夠得到茶葉最原始豐富的營養,也能夠品嘗到最佳的茶湯風味。

The ways to preserve tea well

We usually rubber band or clips to seal tea bags, which may make tea damp, and influence the quality of tea. Tea absorbs savor and moisture easily. To maintain the quality of tea, we should keep the environment dry, and reduce risks of bacteria breeding. Tea usually is preserved well below 5% of the moisture content. Tea may be damp if pinched softly. Meanwhile, the scent of tea would be influenced by the environment as well. In addition to humidity, temperature, oxygen, time and the sunshine are factors related to preserve tea well. To preserve tea well, tea should not be exposed to the sunshine, but kept in the lower temperature, and isolated from oxygen[1-2].

The way to preserve tea can be stored in either room temperature or low temperature:

  1. Room temperature

(1) Put tea in storage bags first, and squeeze air from it. It can be preserved better by putting on the second bag from the opposite side. Furthermore, the effect would be strengthened through put the drier in containers that is opaque and airtight.

(2) It is advised to put little tea in metal cans first for removing savor. Then, store tea in bags, and put it in cans away from sunlight, fire or damp places.

(3) A great amount of tea should be separated into several bags to reduce risks that remaining tea could oxidize, and be stored in cool and dry places[1-3].

  1. Low temperature

(1) Before putting into the refrigerator, seal tea in storage bags first to avoid being exposure to savor.

(2) It is recommended to store tea at around 5℃. However, it is advised to preserve tea between 0℃ and 5℃ if the retention period is shorter than six months. If the shelf life is over six months, it is preferred to store tea in the freezer.

(3) A great amount of tea should be separated into several bags to reduce risks that the same bag is repeatedly frozen.

(4) Take tea out of cans until the temperature is close to room temperature. Otherwise, temperature difference would result in the coagulation of moisture, and increase the risks of deteriorating[1-3].

Different kinds of tea should be separated from storage in either room temperature or low temperature. However, tea would still slowly oxidize itself even in the good storage. Amino acids and aroma reduce a bit, which influences the quality of tea slightly. Meanwhile, polyphenols oxide would easily combine amino acids to produce dark polymer, which makes the color of tea darker, and lower the freshness of tea[4].
