品茶的要訣

怎麼喝茶比較好?

品茶可以分別從外觀色澤香氣味道加以感受,首先觀察茶湯色澤,接著將茶壺輕輕晃動,以鼻靠近壺緣輕聞或深聞,重複一兩次以感受茶香的濃淡。將茶倒入杯中,再次嗅聞茶香,最後輕聞茶壺內所聚集之香氣。經過熱水沖泡後,茶葉的香氣會慢慢散發出來,茶香應以熱聞溫聞冷聞依序進行,熱聞可以辨別香氣的濃淡,但容易刺激嗅覺,影響嗅覺的敏感度,因此以溫聞感受到的茶香較為準確,而冷聞則是感受茶香的持久性與否,若是發酵不足的茶,熱聞時會誤以為清香,冷聞時則有菁味[1-2]。

飲茶時,以溫度45到50度C較為適合,太燙太刺激而容易感到麻木,溫度太低則感受程度較差,容易產生不協調的口感。飲茶建議分多次小口飲用,分別感受熱茶溫茶冷茶的滋味,首先喝上一小口含在嘴巴,以舌頭輕輕打轉,讓茶湯充分與味蕾接觸,等到香氣味道慢慢擴散到整個口腔與鼻腔之後,再慢慢嚥下。品質好的茶入口味道濃郁,鮮醇少苦澀,嚥下時甘甜柔潤且冷聞時仍持續能感受到清爽的餘香[1-2]。

除了品茶有基本的方式之外,沖泡倒水時將茶壺上下拉三次,使茶葉能均勻吸水,有助於茶湯顯色與散發香氣,茶具與茶葉保存時也要盡量避免沾染到其他味道。另外泡茶時,茶葉不建議浸泡太久,以現泡現飲最佳,也不推薦泡太過濃郁的茶,因為濃茶通常有過量的單寧酸咖啡因,不只破壞茶葉原本的香氣味道,也會影響健康[2-3]。要享用一杯好喝的茶,必須兼顧多個面向,不過茶葉品質也是很重要的喔!

Tips to tea sipping

Tea sipping can be divided into three steps, observe, smell and taste. First, observe appearance and the color. Then, shake the teapot softly, move closer to teapot edge, and take a light or deep smell to feel the scent of tea. Smell again after pouring into the cup, and smell the scent in the teapot at the same time. The scent would emit gradually after brewed at high temperature. Therefore, the step to smell tea should follow the temperature respectively. Smelling at high temperature helps recognize whether the smell of tea is strong or not, but usually lower the sensitivity of smell. Moderate temperature is preferred to have an more accurate smell. Smelling at lower temperature can test how long the scent of tea lasts. Fermented incompletely tea wrongly smells fragrant at high temperature, but actually emits musty smell at lower temperature[1-2].

Drinking tea at 45 to 50 degrees Celsius is advisable. Hot tea tastes too strong and could lead to insensible sense of taste, while the taste would be inconsistent if drinking cooling tea. It is recommended to take a small sip in multiple times. First, take a small sip, feel the taste through the tongue, and then swallow it after the smell and taste spreading in the mouth. High-class tea tastes strong but not bitter at the first time, tastes soft and sweet when swallowing, and even emits the fragrance at the lower temperature[1-2].

Pouring water up and down three times when brewing tea helps tea absorb water averagely, which benefits tea color to appear and the fragrance to emit. The preserve of tea and tea sets should be separated from other tastes. Furthermore, it is preferred to brew tea not for too long and drink it immediately after brewing. Stronger tea, brewed for too long, contains excess tannic acid and caffeine, which may damage both the original quality of tea and our health[2-3]. Having a tasty tea includes several aspects, and perhaps the quality of tea matters the most!
