茶粉跟茶葉的泡茶效果或營養成分一樣嗎?

粉茶是利用粉碎機,直接將茶葉研磨成細微粉末所製作而成,因此能夠保留茶葉原有的香氣與營養成分。粉茶除了保留了茶葉原有的營養,例如維生素胡蘿蔔素兒茶素膳食纖維等有益物質之外,以傳統茶葉來說,沖泡時有些營養成分較不易溶於水,但因為粉茶較為細碎,可以將茶葉全部營養成分溶於水中,茶葉味道也較容易釋放出來,同時茶湯味道與顏色也相對濃郁[1-6]。

製作粉茶時,可以先輕揉茶葉,稍有破裂後再採用重揉成細小茶塊,而後首先進行5分鐘大約100度高溫的乾燥,再採用80度的低溫直到茶葉完全乾燥,即可進行研磨篩選的作業。茶葉纖維含量及茶梗多寡與粉茶口感及品質息息相關,因此適當的篩選有助於粉茶品質的分類,通常是將已研磨好的粉茶利用過濾機進行篩選,依顆粒度不同而依序區分等級。粉茶顆粒細微,相較茶葉更容易吸收空氣中的濕氣,因此需要妥善使用不透光與防濕的包裝來保存,例如鋁箔積層袋,以避免氧化變質[4-6]。

粉茶攜帶與沖泡均很方便,通常1-2克的粉末就可以泡出一杯500毫升的茶湯,因此只要有水即可沖泡出一杯好茶,而當粉茶沖泡於水中時,因為水中有許多顆粒懸浮,因此茶湯較不透明,放久之後也會產生自然的沉澱現象,不過為了健康與品質問題,由粉茶所沖泡出的茶湯仍要盡快飲用完畢,同時也要注意一天的飲用量不可以過多[4-6]。

使用粉茶來泡茶一樣可以達到喝茶的好處,像是抗老化降低膽固醇預防動脈硬化心血管疾病保護眼睛以及促進腸胃蠕動等,原本只有綠茶粉較為人熟知,但目前市面上粉茶的選擇逐漸多元化,像是烏龍茶東方美人紅茶等口味都已慢慢被研發出來[7]。使用粉茶泡茶雖然方便,但卻無法體驗到傳統泡茶的樂趣,因此選擇傳統泡茶或粉茶方式仍然要看個人的喜好而定。

The techniques and applications of tea powders

Tea powders are tea leaves which are milled directly by the grinder, which can preserve all nutrition of tea and its scent. In addition to keeping original nutrition, such as vitamins, carotenes, catechin and dietary fibers, crushed tea powders help release nutrition of tea more in the water, and so does the taste compared to traditional tea leaves containing insoluble nutrition in the water. Furthermore, the flavor and the color of tea brewed by tea powders are thicker as well[1-6].

In the production of tea powders, roll tea leaves slightly first, and roll heavily after they are crushed. Then, dry them for about 5 minutes at around 100 degrees, heat at 80 degrees until they become completely dry, and turn to the process of grinding and filtering. The taste and quality of tea powders are connected with the amount of tea fibers and stems. Therefore, adopting the filter to select by size of granules, which helps rank the quality. Tea powders are tiny, and are exposed to moisture easier compared to tea leaves. To prevent from oxidation, it is advised to preserve them in the package that can keep from the sunshine and moisture, such as aluminum foil bags[4-6].

It is convenient for tea powders to carry and brew. Usually, 1-2g tea powders can make around 500c.c tea. Therefore, you can brew tea immediately if there is water. Meanwhile, there are a lot of granules when tea powders are brewed in water. It is natural that tea brewed by tea powders is more turbid, and would accumulate after a while. However, for our health and the best quality, it is suggested to drink tea brewed by tea powders soon. In addition, the amount of drinking per day should not be too much[4-6].

Tea brewed by tea powders is beneficial for our health, which is the same, even more than the effect of traditional tea leaves. For example, prevent from aging, arteriosclerosis and cardiovascular diseases, reduce cholesterol, protect eyes, promote the digestion, and so on. Green tea powders is common at first while the choices are gradually diverse now with new development of different flavors, such as oolong tea, oriental beauty tea and black tea[7]. Compared to tea leaves, brewing tea by tea powders does not bring the joy of traditional brewing ways but much more convenient. Therefore, the way of brewing depends on personal preferences. Both tea leaves and tea powders are healthy for us.
